- - Slice the lotus stem (bhey) into thin rounds and soak them in water for about 15 minutes to remove any excess starch. - Dice the pumpkin (kadoo) into small pieces.

Cook the Vegetables:
- - Heat oil in a pan or wok. - Add cumin seeds and let them splutter. - Add chopped onion, garlic, and ginger. Sauté until the onions become translucent.
- - Add turmeric powder, coriander powder, and red chili powder. Sauté for a minute until the spices are well-mixed.
- - Drain the lotus stem and add it to the pan along with the diced pumpkin. - Mix well and cook for a few minutes
- - Add chopped tomatoes and salt. - Cover the pan and let the vegetables simmer on low heat until they are tender. Stir occasionally to prevent sticking, and you may need to add a little water if it gets too dry.
