Ingredients :
- For Malpua: - 1 cup all-purpose flour (maida) - 1/2 cup milk - 2 tablespoons semolina (sooji) - 1/4 cup mashed ripe bananas - 1/4 teaspoon fennel seeds (saunf) - A pinch of cardamom powder - A pinch of baking powder - Ghee or oil for frying For Sugar Syrup: - 1 cup sugar - 1/2 cup water - A few saffron strands (optional) - A few drops of rose water (optional) - A squeeze of lemon juice
Recipe:

For Malpua:
- 1. In a mixing bowl, combine the all-purpose flour, semolina, mashed bananas, fennel seeds, cardamom powder, and baking powder. 2. Gradually add milk and mix well to create a smooth batter. It should be thick but pourable. If needed, adjust the consistency by adding a little more milk. 3. Heat ghee or oil in a shallow pan or griddle over medium heat. 4. Once the ghee or oil is hot, pour a small ladleful of the batter into the pan to make a small pancake. You can make multiple malpuas at the same time, depending on the size of your pan. 5. Cook the malpuas until they turn golden brown on both sides, flipping them as needed. Ensure they are crispy and cooked through.
-
For Sugar Syrup:
- 1. In a separate saucepan, combine sugar and water to make the sugar syrup. 2. Heat the mixture until it comes to a boil. Add saffron strands and a few drops of rose water for added flavor, if desired. 3. Let the syrup simmer for a few minutes until it reaches a one-string consistency. To check the consistency, take a drop of syrup between your thumb and forefinger; it should form a single thread when pulled apart. 4. Add a squeeze of lemon juice to prevent crystallization of the syrup.
-
Assembling:
- 1. Once the malpuas are cooked, drain any excess ghee or oil and immediately dip them into the warm sugar syrup. 2. Allow the malpuas to soak in the syrup for a few minutes until they become soft and absorb the sweetness. 3. Serve Malpua hot, garnished with chopped nuts or a scoop of rabri (thickened sweet milk) if desired.
