- 1. In a mixing bowl, combine gram flour, yogurt, water, turmeric powder, asafoetida, and salt. 2. Mix well to form a smooth, lump-free batter. 3. Transfer the batter to a non-stick pan or heavy-bottomed saucepan. 4. Cook the batter over low-medium heat, stirring continuously to avoid lumps and ensure it doesn't stick to the pan. 5. Continue cooking until the batter thickens and becomes a smooth, spreadable consistency. This may take about 10-15 minutes. 6. Immediately, while the batter is still hot, spread a thin layer of it on a clean, greased surface. You can use a backside of a plate or a kitchen countertop for this. 7. Allow it to cool for a few minutes.
-
For Seasoning and Filling:
- 1. Once the spread batter is slightly cooled but still pliable, cut it into thin strips. 2. Carefully roll each strip into a tight coil or roll. 3. Arrange the rolls on a serving plate.
-
Tempering and Garnish:
- 1. In a small pan, heat oil and add mustard seeds. Let them splutter. 2. Add cumin seeds, green chilies, curry leaves, and a pinch of asafoetida. Sauté briefly until the spices release their aroma. 3. Drizzle this tempering over the arranged Khandvi rolls. 4. Garnish with grated coconut and fresh coriander leaves. 5. Serve Khandvi as a delightful snack or appetizer.
