A pinch of asafoetida (hing) 10. Salt to taste 11. 2-3 tablespoons oil 12. 2-3 cups water 13. Chopped fresh coriander leaves for garnish

For Bhakari (Sorghum or Pearl Millet Flatbread):
1. In a mixing bowl, combine jowar or bajra flour and a pinch of salt.
2. Gradually add water and knead the flour to form a smooth, non-sticky dough.
3. Divide the dough into small portions and shape them into round, flat discs.
4. Heat a tava (griddle) and cook the bhakari on both sides until they are golden brown and cooked through.

For Pithali (Gram Flour Gravy):

1. In a bowl, mix the gram flour with some water to create a lump-free paste.
2. In a pan, heat oil and add cumin seeds and asafoetida.
3. Add chopped onions and green chilies and sauté until the onions turn translucent.
4. Add grated ginger and chopped tomatoes and cook until the tomatoes are soft.
5. Add turmeric, red chili powder, and salt. Stir well.
6. Pour in the besan paste and stir continuously to avoid lumps.
7. Gradually add water to achieve the desired consistency and let it simmer for a few minutes.
8. Once the pithali thickens, remove it from the heat.
9. Serve the pithali with bhakari and garnish with chopped coriander leaves.
